Jambalaya with Chorizo
1 medium green pepper, chopped
1/2 cup chopped onion
1/2 cup chopped celery
4 links of Chorizo
1 tbsp. vegetable oil
1 lb. boneless skinless chicken breasts, cut into strips
2 tbsp. lite Creole seasoning, divided
1 can (14 1/2 oz.) diced tomatoes, undrained
1 cup water
1 can (8 oz.) low sodium tomato sauce
1/2 lb. cleaned medium shrimp
2 cups MINUTE® Brown Rice, uncooked
Heat oil in large nonstick skillet over medium-high heat. Add bell peppers, onions and celery; cook and stir until crisp-tender.
Toss chicken and Chorizo with 1 tbsp. of the seasoning. Add to skillet. Cook and stir 2 to 3 min. or until cooked through.
Add tomatoes, water, tomato sauce, shrimp and remaining 1 tbsp. seasoning; mix well. Bring to boil. Stir in rice; cover. Simmer 5 minutes Remove from heat. Let stand 5 minutes. Fluff with fork.
Makes 6 servings.
Cooks Note: I am still limited in the movement of my left shoulder following surgery last week I may have to adopt this recipe I will sever with French bread and a salad, pair with your favorite wine ( I am abstaining from alcohol while on pain meds.)

BACON WRAPPED CHICKEN BREAST STUFFED WITH PORTOBELLO
2 boneless skinless split chicken breasts
1/2 package of bacon
1 red bell pepper (sliced)
1 red onion (sliced)
1 8oz package of Portobello mushrooms (sliced)
1 package of cream cheese
1 jalapeno (diced)
1-3 green onions (diced)
Wash the chicken breasts and set aside.
Combine 1/2 of the bell pepper, mushroom, jalapeño, green onion and red onion, mix them together and mix with sofened cream cheese.
Next, open the chicken breast; spread the cream cheese mixture inside the chicken breast.
Lay several strips of mushroom, and bell pepper on the inside (about 3 strips each).
Close the chicken up and using the uncooked bacon, start at one edge and going over to the next, wrapping it completely in the bacon, using toothpicks to hold together.
Cook the bacon wrapped chicken at 350°F for about 45 minutes to an hour or until the bacon is crisp.
As the chicken is baking, sauté the remaining vegetables in a skillet, (if you want, add a shot glass of Sherry or Brandy). Drizzle over the top of chicken when finished.
Tonight I’m serving with pearled couscous, green salad and fruit compote.
Pair with your favorite wine.
PORK STIR-FRY WITH NOODLES
3 pkg (3 oz each pkg) chicken-flavored ramen noodle soup mix
1 (16 oz pkg) frozen stir-fry vegetable mix
1-1/4 cups orange juice
1/4 cup lower-sodium teriyaki sauce
2 tbsp. sesame oil
2 tbsp. cornstarch
2 tbsp. canola oil
1 lb boneless pork chops, cut into 1/4″-thick slices
2 tbsp. grated peeled ginger
2 minced garlic cloves
2 scallions, sliced
Discard 1 flavor packet from soups.
Bring pot of water to boil. Add noodles (only not flovor packets) and vegetables.
Boil until noodles are cooked through, 2 minutes. Drain.
In a bowl, whisk together orange juice, 1 cup water, teriyaki sauce, sesame oil, cornstarch and remaining 2 flavor packets. Set aside.
In a large skillet over medium-high heat, heat oil. Stir in pork, ginger and garlic. Cook, stirring occasionally, until mix is cooked through, 4-5 minutes.
Remove pork mix from pan. Reserve.
In same pan, bring sauce to boil over medium-high heat.
Cook, stirring until thickened. Add pork, heat through. Add noodle mix and scallions.
Toss to combine.
Add a fresh green salad and a bowl of fruit compote, and pair with your favorite wine.
BONES QUICK EASY PIZZA
12 inch Boboli pizza crust
3-5 tbsp. pizza or tomato sauce (Don’t flood you dough)
2 tbsp. oregano
1/2 tsp. basil
Pinch garlic salt
1/2 tsp. tarragon
1/4 tsp. salt
Toppings choice: Canadian bacon, Salami, pepperoni, sausage, mushrooms, onions, pineapple, whatever you’re in the mood for etc.
Mozzarella cheese, shredded
Preheat oven to 450 degrees.
Place Boboli crust on mesh pizza tin or wire rack or pizza stone…
Spread sauce evenly around pizza crust. A thin layer is sufficient.
Spread oregano, basil, salt, tarragon and garlic salt over top of sauce.
Shred fresh Mozzarella cheese and spread over sauce.
Prepare toppings if need be (bacon, sausage, mushrooms, etc.) and add on top of cheese
Bake for 12-14 minutes
